My little baby turned 2! I guess she’s no longer a baby, but a toddler instead. Sigh…. These past 2 years went by so fast! Isn’t it strange how time goes so slow when you are a kid, but just flies by when you grow up? Weird isn’t it?
Anyway, if you know me then you know that I’m not good in the kitchen. Seriously, that’s not my domain at all. So when I showed Juice the pony cake at the Betty Crocker website and told him that I ‘m going to make that cake for Juliet’s birthday, he laughed….and laughed….and then he said that there’s no way that I could make it. To be honest, I doubted myself as well.
I went and got my cake mix and frosting, watched the video (I’m SO glad that they have that on their site!) printed out the template, and went to work. The instructions were straight forward and I was able to do it! Seriously, I made THIS cake by myself…
I do have a few tips though.
- Make sure you grease AND flour your pans before you pour the cake mix in. Otherwise the cake might stick
- FREEZE the cake before and after the crumb coat. It makes it SO much easier to ice.
- Put wax paper down before you put the cake on to ice it. I didn’t do that and the tray that I had the cake on got all dirty with stray icing. If you put wax paper around the edges of the cake you’ll be able to just pull the wax paper out and have a clean tray.
- Use the Betty Crocker Whipped Frosting. It goes on MUCH easier!
The cake was a huge hit and it tasted great as well! We dug in after we sang Happy Birthday to Juliet. She was licking her lips in anticipation!
Then she opened up some presents along with her big brother’s help.
She had a great birthday and now Jake’s is coming up this month on the 25th. Please tell me where the time goes!
